Easy Salmon Curry

Print Easy Salmon Curry Course: Main Course Cuisine: Fish Servings: 4 people Ingredients 1 tbsp coconut oil 1 large leek thinly sliced (OR 1 sweet onion diced) 2 cloves garlic minced 1 tbsp ginger minced 1 can coconut milk full fat 1/2 cup water 1 tbsp red curry paste indian or thai 1 tbsp soy sauce , Bragg's Aminos (recommended), or coconut aminos 1 5 oz. bag/container kale, spinach, chard mix 1 pound wild salmon cut into cubes (USE THAWED FROZEN SALMON) Instructions In a large pot, melt the coconut oil over medium heat and cook the leek, garlic, and ginger until tender. Add in the coconut milk, water, curry, and soy sauce; bring the mixture to a boil. Reduce the heat to medium, and add in the salmon and greens. Simmer until the salmon is cooked-through and the greens are wilted, approximately 8 minutes. Easy Chicken Stir Fry

Print Easy Chicken Stir Fry Course: Main Course Servings: 4 people Ingredients 2 bags frozen stir fry mix 2 large chicken breast cut in half, or 4 small 1 batch creamy garlic dressing see below for recipe olive oil extra virgin garlic powder onion powdert pepper Creamy Garlic Dressing 1/2 cup olive oil extra virgin 1/4 cup apple cider vinegar 3 cloves garlic crushed 3 tbsp lemon juice 1/2 tsp sea salt 1/2 tsp dijon mustard 1 tbsp honey or pure maple syrup Instructions Heat pan to medium, add oil and chicken. Season with pepper, garlic and onion powder. Once chicken is cooked through, remove from pan and add in frozen veggies. Stir fry until thawed and cooked. Add chicken back to the pan. Plate and top with desired amount of dressing (1-2 Tbsp). Creamy Garlic Dressing Place ingredients in a blender or food processor. Blend until smooth. Refrigerate dressing if not using immediately. If dressing solidifies when cold (the olive oil does that), let sit at room temperature for 30 minutes.
