Ingredients
- 1/2 cup old-fashioned rolled oats gluten free if needed
- 1/2 banana mashed
- 1/4 cup cottage cheese
- 1/2 tsp cinnamon
Instructions

Spray pan with cooking spray and set to a medium heat

Combine all ingredients in a blender or food processor until batter is smooth.

Pour batter onto the hot pan, cook for approximately 3 minutes each side

Hi Jenny!! Now this is just off the top of my head, but if you have no problems with eating soy you could use tofu. I’m not sure that it would be a strait 1:1 substitute but if you play around with it, you should get it to work. I have to say that as someone who doesn’t eat dairy, this was a recipe I had to give up. I played around with different amounts of milk, but then gave up since I have so many healthy pancake recipes that don’t call for cottage cheese 🙂
