Burrito Bowl

Ingredients
  • 1/3 cup rice or quinoa, cooked
  • 1 cup black beans rinsed
  • cherry tomatoes halved
  • 1/2 cup corn
  • fresh cilantro chopped
  • lime juice freshly squeezed
  • red onion diced, to tasted
Instructions
  1. Cook rice or quinoa according to package instructions. Let cool.
  2. Cut up all veggies and herbs.
  3. Arrange items in a bowls side by side or mix everything together.
  4. Drizzle with fresh lime juice.
  5. Option to use a handful of corn tortilla chips as a side.
