Burrito Bowls

  • 1 red pepper
  • 1 onion sweet or red
  • 1 package mushrooms
  • 3 servings brown rice cooked
  • 1 can black beans small can
  • cumin
  • chili powder
  • oregano
  • salt
  • pepper
  • olive oil extra virgin
  1. Cook rice according to package directions. Drain and rinse beans, place in small sauce pan (don’t heat yet)
  2. Either dice the onion and red pepper or slice using a mandolin. Heat a large pan over medium high heat, add 2-3 tsp of the oil, then add in the red pepper and onion.
  3. Slice the mushrooms and add to the pan, season with salt and pepper.
  4. Now you can heat your beans, watch them, they burn quickly!!!
  5. Once the veggies are done to your liking and your beans are heated through, you can season the beans with cumin, chili powder, garlic powder and oregano. Play around to see what combo/quantity you like!!
  6. Add ingredients into bowls, top with diced or mashed avocado
