Ingredients
  • 1 small chicken breast or 1/2 of a large, baked and diced
  • 1/2 cup roasted sweet potato or roasted butternut squash
  • 1/8 cup red onion diced, optional
  • 1 small apple diced
  • mixed greens as much as you want
  • 1 tbsp chopped pecans
  • 1-2 tbsp maple vinaigrette
Maple Vinaigrette
  • 2 tbsp maple syrup 100% pure
  • 1 tbsp apple cider vinegar
  • 1 tsp dijon mustard
  • 1 tsp garlic minced, or garlic powder
  • 1 tsp shallot minced, or onion powder
  • 1/4 cup olive oil extra virgin
  • 1 pinch salt
  • 1 pinch pepper
