Fiesta Quinoa Salad

  • 3/4 cup quinoa dry
  • 1 1/2 cup water
  • 1 small red onion diced
  • 1 can black beans large or small can, your choice, rinsed
  • cilantro chopped, amount to taste
  • 2 lime squeezed for juice
  • 1/2 tsp cumin
  • 1 pinch salt
  • 1 pinch pepper
  • 1 tbsp olive oil extra virgin
  1. Rinse quinoa (don’t skip this) then combine with water in a small sauce pan. Cook according to package directions.
  2. Prepare other ingredients while quinoa is cooking
  3. Combine all ingredients in a re-sealable container
Recipe Notes

If preparing this ahead of time, cook the quinoa and cool in a separate dish. Layer all the other ingredients in another dish, minus the lime, and spices. On the day you are ready to eat it, combine everything together.
