- 3/4 cup quinoa dry
- 1 1/2 cup water
- 1 small red onion diced
- 1 can black beans large or small can, your choice, rinsed
- cilantro chopped, amount to taste
- 2 lime squeezed for juice
- 1/2 tsp cumin
- 1 pinch salt
- 1 pinch pepper
- 1 tbsp olive oil extra virgin
Rinse quinoa (don’t skip this) then combine with water in a small sauce pan. Cook according to package directions.
Prepare other ingredients while quinoa is cooking
Combine all ingredients in a re-sealable container
If preparing this ahead of time, cook the quinoa and cool in a separate dish. Layer all the other ingredients in another dish, minus the lime, and spices. On the day you are ready to eat it, combine everything together.
