Grilled Portobello Mushrooms with Veggies

Ingredients
  • 1-2 large portobello mushrooms diced
  • red onion diced
  • red pepper diced
  • roma tomatoes diced
  • fresh basil leaves
  • olive oil
  • 1 tsp minced garlic
Instructions
  1. Rub all sides of the mushrooms with enough olive oil to cover them.
  2. Grill mushroom caps either on broil in the oven or on your BBQ until hot. Approx 10 minutes. Flip halfway through.
  3. Mix together diced veggies, 1 tbsp of olive oil, minced garlic and chopped fresh basil (to taste).
  4. Place grilled caps on a plate gill side up.
  5. Top with veggie mix.
  6. Enjoy!
