Quinoa Medley on a Bed of Greens
Servings: 1 person
Ingredients
  • 1/3 cup quinoa cooked, cooled
  • handful dried cranberries
  • 5-10 walnuts crushed
  • 1 apple diced
  • 1 red onion optional
  • greens of your choice (mixed greens, kale, spinach, etc.)
Instructions
  1. Place as many greens as you'd like on a plate.
  2. Combine cooked (according to package directions) and cooled quinoa, nuts, dried cranberries, apples, and red onion.
  3. Place quinoa mixture on top of greens and enjoy!
