Rice Noodles with Veggies
Course: Main Course, Side Dish
Servings: 2 people
Ingredients
  • rice noodles
  • cooking onion diced
  • carrots thinly julienned
  • broccoli bite sized pieced
  • zucchini julienned or bite size pieces
Instructions
  1. Cook rice noodle according to package directions for 2 to 4 servings.
  2. Cut up all veggies. Use as many veggies as you'd like.
  3. Heat up a frying pan at medium heat.
  4. Add 1-2 tbsp of olive oil. Fry up veggies until soft enough for your taste. Instead of adding extra oil if things start to stick, use a touch of water.
  5. Add rice noodles to the fried veggies and fry for a few minutes.
  6. Hot sriracha sauce is good with this dish.
Recipe Notes

I find rice noodles are always better if you cook ahead of time and let them cool. Then you can add them to the frying pan to heat them up.
