- 1 roasting chicken size of choice
- 1/2 to 1 lemon cut into wedges
- 2 cloves garlic
- spices dried basil, oregano, summer savory, or herbes de provence
- olive oil extra virgin
Preheat oven to 450
Rub the chicken all over with olive oil, sprinkle with salt and pepper and add additional spices if desired.
Put lemon wedges and garlic into the cavity of the chicken
Roast for 20 min at 450 then reduce heat to 350 and roast for 20 minutes per lb.
