Roasted Root Vegetables

Servings: 1 family
- carrots peeled, chopped
- parsnips peeled, chopped
- red onion chopped
- turnip peeled, chopped
- beets peeled, chopped
- pepper to taste
- spices of your choice and to taste
Wash, peel and chop the veggies
Place in a baking dish, drizzle with olive oil and season with pepper.
Cooking time with vary depending on the veggies you use. Approximately 45 minutes to an hour should cook everything, turn several times while cooking.
If NOT doing along with a roast chicken, you can roast the veggies at a higher temp (400 or 450 to roast them quicker)
