- 1 sweet potato cut into bite sized pieces
- spices of your choosing
- coconut oil small amount to barely coat potatoes
Peel sweet potato and cut into bit sized pieces
Put onto parchment paper lined pan (this helps crisp them up a bit!) with a small amount of coconut oil
Roast for 30-40 minutes, turning halfway. Roasting time will depend on the size you cut them so keep an eye on them if they are really small.
You can use this recipe for as many sweet potatoes as needed.
