Sweet Pepper, Bean, and Rice Salad
Servings: 4 people
Ingredients
  • 2 cups brown rice of choice (jasmine or basmati are nice for this recipe), cooled
  • 1 can black beans rinsed
  • 3 large sweet peppers 3 different colours add to the flavour and "prettiness" of this salad
  • natural rice vinegar
  • 1 red onion diced
Instructions
  1. Cook rice according to package directions. Let cool.
  2. Rinse the can of black beans under cool water.
  3. Dice all of the sweet peppers.
  4. Diced enough red onion for your taste buds.
  5. Mix all ingredients together.
  6. Add natural rice vinegar to taste.
Recipe Notes

When eating grains as a side dish, a fist sized portion is sufficient. If this is your main meal, consider eating up to 2 fist sizes.
