Vegetable Soup

Servings: 6 servings
Ingredients
  • 4 cups vegetable broth
  • 2 tsp olive oil
  • 1 cup celery chopped
  • 1 cup onion chopped
  • 1 tsp minced garlic
  • 1 tsp dried thyme
  • 1 tsp dried marjoram
  • 1 can diced tomatoes undrained
  • 1 1/2 cups vegetable juice such as V8, reduced sodium
  • 3 cups frozen veggie mix of choice
  • 1/2 cup quinoa cooked ahead of time
Instructions
  1. Heat olive oil in a large pot over medium heat.
  2. Add celery, onions, and garlic. Cook until they begin to soften.
  3. Add spices and cook for another minute.
  4. All all remaining ingredients. Bring to a boil.
  5. Reduce to med-low heat and cook for 25 minutes. Add cooked quinoa in the last 5 minutes.
  6. Serve hot!
