- 4 cups vegetable broth
- 2 tsp olive oil
- 1 cup celery chopped
- 1 cup onion chopped
- 1 tsp minced garlic
- 1 tsp dried thyme
- 1 tsp dried marjoram
- 1 can diced tomatoes undrained
- 1 1/2 cups vegetable juice such as V8, reduced sodium
- 3 cups frozen veggie mix of choice
- 1/2 cup quinoa cooked ahead of time
Heat olive oil in a large pot over medium heat.
Add celery, onions, and garlic. Cook until they begin to soften.
Add spices and cook for another minute.
All all remaining ingredients. Bring to a boil.
Reduce to med-low heat and cook for 25 minutes. Add cooked quinoa in the last 5 minutes.
