Vegetable Stir Fry with Rice & Beans

Ingredients
  • broccoli cut up in bite sized pieces
  • carrots sliced
  • mushrooms halved
  • zuchinni cut up in bite sized pieces
  • sweet peppers cut up in bite sized pieces
  • onion diced
  • celery sliced
  • other veggies of choice
  • 2 cups brown rice
  • 1 can black beans rinsed
Instructions
  1. Cook rice according to package instructions.
  2. Cut up all veggies. Use as many veggies as you'd like.
  3. Heat up a frying pan at medium heat.
  4. Add 1-2 tbsp of olive oil. Fry up veggies until soft enough for your taste. Instead of adding extra oil if things start to stick, use a touch of water.
  5. Add spices of your choice to the veggie mix.
  6. Add black beans to hot cooked rice.
  7. Serve veggies on a bed of rice.
