Veggie Fried Rice

Ingredients
  • onion diced
  • celery diced
  • mushrooms sliced
  • sweet peppers diced
  • other veggies diced
  • mixed frozen corn, carrots, peas optional
  • olive oil
  • 2 cups brown rice long grain, basmati, or jasmine
  • spices
Instructions
  1. Cook rice according to package instructions.
  2. Cut up all veggies. Use as many veggies as you'd like.
  3. Heat up a frying pan at medium heat.
  4. Add 1-2 tbsp of olive oil. Fry up veggies until soft enough for your taste. Instead of adding extra oil if things start to stick, use a touch of water.
  5. Add spices of your choice to the veggie mix.
  6. Add cooked rice to the cooked veggies and stir.
  7. Serve hot!
