Easy Salmon Curry

  • 1 tbsp coconut oil
  • 1 large leek thinly sliced (OR 1 sweet onion diced)
  • 2 cloves garlic minced
  • 1 tbsp ginger minced
  • 1 can coconut milk full fat
  • 1/2 cup water
  • 1 tbsp red curry paste indian or thai
  • 1 tbsp soy sauce , Bragg's Aminos (recommended), or coconut aminos
  • 1 5 oz. bag/container kale, spinach, chard mix
  • 1 pound wild salmon cut into cubes (USE THAWED FROZEN SALMON)


  1. In a large pot, melt the coconut oil over medium heat and cook the leek, garlic, and ginger until tender.
  2. Add in the coconut milk, water, curry, and soy sauce; bring the mixture to a boil.
  3. Reduce the heat to medium, and add in the salmon and greens. Simmer until the salmon is cooked-through and the greens are wilted, approximately 8 minutes.
